In the summer of 2017 I did my co op work term at Sea Salt Food Company in Nanaimo B.C. They are a boutique catering company on Vancouver Island focusing on sustainable west coast cuisine. I learnt all about seafood cookery, catering for weddings, charcuterie and food styling. Most of the produce used was from the garden in the backyard or local farmers markets, this lit a spark in me to strive for fresh regional ingredients in all my cooking.

In May 2017 I started at The Nest Bistro in downtown Nanaimo under Chef/owners Nic and Jen. Concentrating on fresh, organic and local ingredients The Nest produces delicious French/Italian influenced food. As second cook I have learnt line cooking, organization and to always keep high quality standards.
